Happy Tuesday friends! Today is the second post in my new series #unpretentiouspairingsforone 🍽 This one comes with a such simple spritz that there is no recipe post which is perfect for a during the week drink! Limoncello Spritz and Greek Lemon Chicken Soup! The spritz is literally 4 ingredients: @prohibitionspirits Limoncello, @lacroixwater Lemon Sparkling Water, citrus bitters and a squeeze of lemon juice! Light, refreshing, and just a touch of sweet. If you want more sweet swap sparkling water with @fevertreemixers Citrus Tonic Water. The soup is also extremely easy because it’s done in a slow cooker so you can go to work while it cooks and come home to finish it! Anyone living solo, really anyone who works all day, knows that a slow cooker is your #bff and what makes this so amazing is you take half to freeze for future last minute meals, and the other half you have left overs for lunch/dinner the rest of the week! The cream texture of the soup already feels fancy but when you add garnishes of fresh feta and chopped dill paired with a sip of your sprit you feel transported to a neighborhood greek bistro ❤️ Recipe can be found on my website and the link is in my bio.
This is the first of #unpretentiouspairingsforone a new series I’m starting and hoping to release one a week of recipes and a drink pairing for one! If you read my last post you will have seen that I recently moved to Sonoma! I used to always cook for my family and friends but with them so far away I now cook for one! I know there are lots like me who probably fall in to the slump of finding dinner for one depressing or lonely. I’m here to say it doesn’t have to be! Dinners for one can be just as fun and exciting as dinner for 2 or 20! This was actually my Sunday Night dinner of Spaghetti Aglio e Olio with my secret (now not secret) touch of adding butter to the olive oil for more depth and richness 🤤 This garlicy deliciousness was paired with an underrated grape varietal Furmint in this affordable Tokaj. Hungarian wines hold a soft spot for me ever since I visited Hungry for the first time in 2018. Some might recognize Tokaj as the famed desert wine Tokaj Aszu, but like many European wines it is actually named after the region it is produced and Tokaj also makes dry wines. This wine is crisp, clean, citrusy, and light minerality with high acidity which was perfect to cut through the fattiness of olive oil and butter and enhance the lemon and herbs in the pasta. Normally I have to search for these kind of wines online or in small specialty shops, but this Chateau Megyer was a lucky find from Total Wine. Even better it was less than $20!
