Peru is famous for Pisco! The national drink is the Pisco Sour a delightful tangy, sweet, and strong mixture. However, Pisco isn’t the easiest spirit to find in your stander grocery store or corner liquor store in the United States. Especially not in the Napa/Sonoma Valley where I currently reside. What is abundant? WINE! SO, what wine can you pair with a South America dish? Personally I love Albariño, a Spanish varietal, that is popping up in many California wine regions. I paired my Lomo Saltado with Steven Kent Winery’s Lola, a white blend of Albariño and Sauvignon Blanc. Its dry, fruity, subtle mineralogy, and has lovely acidity. All of which go well with the salty and spicy flavors of this Peruvian stir fry! Enjoy!
