-2 Sprigs Fresh Rosemary (one for garnish)

-3 Dashes Black Walnut Bitters

-1oz Apricot Syrup

-2oz Rabbit Hole Kentucky Straight Bourbon

-1oz Venus Gin #1

-4oz Fever Tree Club Soda

Fill a tall glass with ice. In a large mixing cup separate rosemary leaves from the stem. Discard the stem. Muddle rosemary with bitters and apricot syrup. Add ice, pour in bourbon and rosemary, and mix for to seconds with a mixing spoon. Place cocktail strainer on top of mixing glass and pour in to glass. Top with club soda and garnish with a sprig of rosemary.

Notes: Apricot syrup is very simple to make. In a sauce pan add a cup of fresh or frozen apricots, 1/2 cup of water, and a 1/2 cup of sugar. Cook down until sugar is dissolved and apricots have broken down. Place a strainer over a jar and pour mixture. Done! Cheat: Take a half cup of apricot jam and a half cup of water and mix till completely dissolved.
